Are there any other differences between the 4.5-inch and 8-inch probe models?
Probe length and price are the most important differences. The 4.5-inch probe is suitable for almost all applications. The longer 8-inch probe is better for some specialized applications like home brewing, checking wine temps, cheese making, deep frying with a pot clip (it keeps the display further away from the splattering hot oil), large batches of soup, and commercial applications like food processing.
The 8-inch probe is also slightly thicker in diameter to support the greater length and has a one second slower response time.
