Three-time James Beard Award winner Dan Pashman, creator and host of The Sporkful food podcast, presents Cascatelli. Translating to waterfalls in Italian, Cascatelli features wavy ruffles along a curved, half-tube shape.
Launched in 2021 after three years of development with Sfoglini, this award-winning pasta maximizes three qualities:

Each feature of Cascatelli was thoughtfully designed to bring about these perfect pasta qualities. Additionally, Cascatelli is made using a bronze die extrusion process that creates a rougher surface for the sauce to cling to.
